Best Pumpkin Pie Recipe


Ingredients

For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 3-4 tablespoons ice water

For the Filling:

  • 1 (15-ounce) can pumpkin puree
  • 3/4 cup brown sugar, packed
  • 2 extra-large eggs
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

1. Make the Crust

  • In a large bowl, whisk together flour, salt, and sugar. Add cold butter and, using a pastry cutter or fork, mix until coarse crumbs form.
  • Gradually add ice water, 1 tablespoon at a time, until the dough just comes together into a ball. Shape into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
  • Preheat the oven to 375°F (190°C). Roll out the chilled dough and fit it into a 9-inch pie plate. Trim excess dough, leaving a slight overhang, and crimp edges. Freeze for 10 minutes.

2. Par-Bake the Crust

  • Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment, and bake for an additional 5 minutes. Let cool slightly.

3. Prepare the Filling

  • In a large bowl, combine pumpkin puree, brown sugar, eggs, heavy cream, vanilla, cinnamon, ginger, cloves, nutmeg, and salt. Whisk until smooth and well combined.

4. Bake the Pie

  • Pour the filling into the partially baked crust. Bake for 45-50 minutes, or until the center is set but still slightly jiggly. (If the crust edges brown too quickly, cover them with foil.)

5. Cool and Serve

  • Let the pie cool on a wire rack. Serve with whipped cream, if desired.
