Ingredients

For the Cake:

  • 1 ¾ cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk, at room temperature
  • ½ cup vegetable oil (or Mayonnaise)
  • 2 tsp vanilla extract
  • 1 cup boiling water

For the Chocolate Ganache Frosting:

  • 1 ½ cups heavy cream
  • 2 cups semi-sweet chocolate chips (or use dark chocolate for a deeper flavor)

Directions

1. Preparation of the Cake:

  • Preheat the oven to 350°F (175°C). Grease and lightly flour two 9-inch round cake pans.
  • In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  • Add the eggs, then the buttermilk, vegetable oil (or Mayonnaise instead of vegetable oil for additional moisture), and vanilla extract. Mix on medium speed until well combined.
  • Carefully add the boiling water, mixing until the batter is thin and smooth.
  • Divide the batter evenly between the prepared pans.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

2. Make the Chocolate Ganache Frosting:

  • In a small saucepan over medium heat, bring the heavy cream just to a simmer (do not let it boil).
  • Remove from heat and pour over the chocolate chips in a bowl. Let sit for 5 minutes, then stir until smooth and glossy.
  • Allow the ganache to cool and thicken until it reaches a spreadable consistency.

3. Assemble the Cake:

  • Place one cake layer on a serving plate and spread a layer of ganache over it.
  • Place the second layer on top and spread the remaining ganache over the top and around the sides of the cake.
  • For a smooth finish, let the ganache set slightly, then smooth with a spatula.

Optional Toppings:

  • Fresh berries, shaved chocolate, or a dusting of powdered sugar.
