Ingredients
For the Cake:
- 1 ¾ cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 large eggs
- 1 cup buttermilk, at room temperature
- ½ cup vegetable oil (or Mayonnaise)
- 2 tsp vanilla extract
- 1 cup boiling water
For the Chocolate Ganache Frosting:
- 1 ½ cups heavy cream
- 2 cups semi-sweet chocolate chips (or use dark chocolate for a deeper flavor)
Directions
1. Preparation of the Cake:
- Preheat the oven to 350°F (175°C). Grease and lightly flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- Add the eggs, then the buttermilk, vegetable oil (or Mayonnaise instead of vegetable oil for additional moisture), and vanilla extract. Mix on medium speed until well combined.
- Carefully add the boiling water, mixing until the batter is thin and smooth.
- Divide the batter evenly between the prepared pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
2. Make the Chocolate Ganache Frosting:
- In a small saucepan over medium heat, bring the heavy cream just to a simmer (do not let it boil).
- Remove from heat and pour over the chocolate chips in a bowl. Let sit for 5 minutes, then stir until smooth and glossy.
- Allow the ganache to cool and thicken until it reaches a spreadable consistency.
3. Assemble the Cake:
- Place one cake layer on a serving plate and spread a layer of ganache over it.
- Place the second layer on top and spread the remaining ganache over the top and around the sides of the cake.
- For a smooth finish, let the ganache set slightly, then smooth with a spatula.
Optional Toppings:
- Fresh berries, shaved chocolate, or a dusting of powdered sugar.
